2025: Became the GNAC all-time career starts leader (49)...ranks fifth in career wins at MSUB (13), tied for third in career complete games (8), ranks second in innings pitched (264.2), and ranks third in career strikeouts with 210...this season he cut in half his previous best ERA, posting a 3.61 ERA in his senior campaign...threw a total of 89.2 innings with a career best 5-3 record...tallied 67 strikeouts while allowing just 22 walks and 36 earned runs...earned the Yellowjackets their first NCAA Tournament win, pitching a 15-7 victory over Point Loma...named Second Team All-GNAC and Academic All-GNAC.

2024: Was the game one starter for the Yellowjackets...picked up three wins on the season and now sits T-12th all-time (8) in the MSUB record books...made 13 starts on the season and now sits fourth all-time in career starts (36)...had two complete games and now sits fifth all-time in career complete games (6)...threw 73.2 innings and now sits seventh all-time in career innings pitched (181.0)...collected 53 strikeouts and now sits 5th in career strikeouts (145).

2023: Became one the top arm in the rotation for the Yellowjackets...made 13 appearances and started in 12 of them with 65.2 total innings...the sophomore posted a 6.58 ERA and totaled 61 strikeouts while walking just 23 batters...he also had a batting average against of .269 and collected 3 wins.

2022: Solidified himself as a member of the starting pitching rotation as a true freshman…made 10 starts and appeared in 11 games in first season in the program…posted an 8.33 ERA in 35 2/3 innings pitched…totaled 29 strikeouts…threw a season-high seven innings on April 9 against Western Oregon…had a season-high five strikeouts on March 5 at Western Oregon…threw a season-high 99 pitches on Feb. 12 at Cal Poly Pomona…earned first collegiate win on Feb. 12…won two games on the season.

Mira Mesa High School: Two-sport standout…competed in both baseball and football for the Marauders…in junior season on the diamond was voted as his team's pitcher of the year and earned second-team all-Eastern League honors as a sophomore…spent time pitching, playing first base, and in the outfield…on the football field played a variety of positions and earned all-academic honors during his junior year.
 
Coach Waddoups on Betancourt: "Jackson is a unique athlete that has the real ability to impact the game both as a pitcher and hitter. He has a quick arm from the left side and great understanding of how to pitch. We are excited to see what he and Coach (Matt) Hape can accomplish together. He is a very quick twitch athlete with a beautiful swing. It will be fun to watch him grow here at MSUB. When it is all said and done, it will be awesome seeing how he positively impacts the program."
